Day 4 of the Reset was...interesting. I started the day off with an abundance of energy. In fact, I felt ebullient. I'm pretty sure I was actually singing in the car on the way to drive my son to his hockey practice. My morning consisted of mom mode and some prep, and we enjoyed another lunch of sushi and lentil salad.
After lunch, well I hit the wall. I just got so tired that I felt I had no options but to lie down. It was a bit disappointed, given how much energy I had when I started the day, but I supposed this is all part of the process. I allowed myself a nap with my sleeping toddler, which was completely delicious, and then felt re-energized later in the afternoon.
Dinner was surprising! Normally a meal of mostly veggies and a bit of quinoa with minimal seasoning wouldn't be my idea of a fun Saturday night meal. However, it was good. REALLY good! One of the great discoveries I'm making is that it's truly ALL about the preparation. The veggies were stir fried in a combo of coconut and sesame oil, and that made all the difference. I was sad to see it all finished!
Here is what I ate:
Breakfast: Fresh fruit (not a lot here that is "fresh' right now, sadly), yogurt and maple syrup
Lunch: Nori rolls with tempeh and vegetables, Lentil-Lime Salad
Optional Snack: Vegan Chocolate Shakeology
Dinner: Stir Fried Veggies, Cucumber and Tomato Salad, Cooked Quinoa with Nori Gomasio
Here's hoping for a bit more energy tomorrow!
