Ultimate Reset Day 3
Day 3 for me was a Friday, and it was a good one! The headaches have abated and I feel like I"m getting into a groove with the food preparation. The really challenge came at the end of the day. Although it was a good day for the Reset, emotionally it was a bit of a downer. I found that at 6:00PM I REALLY wanted that cocktail to take the edge off! This Reset has really highlighted for me how much of the choices I make about food are emotional rather than based on what my body truly needs. NOT numbing myself on a Friday night after a hard day was a different and difficult experience, one that I suspect was driven partly by previous habits and partly just by cravings and emotions.
The meals were great and the prep not insignificant. Luckily that helped distract me during the evening because I was very busy getting it all ready. Believe it or not, I've eaten a lot of sushi but never actually attempted making it. This was really fun - I enjoyed the process of assembling the rolls, even if they didn't come out quite so Pinterest--worthy! Another discover, turns out I LOVE tempeh!
Here is what I ate:
Breakfast: 2 Scrambled Eggs, Ezekiel Toast, Steamed Spinach
Lunch: Lentil-Lime Salad, Microgreens Salad, Homemade Miso Dressing
Optional Snack: Chocolate Vegan Shakeology
Dinner: Nori Rolls with Tempeh and Veggies, Miso Soup, Japanese Cucumber Salad
I suspect the weekend is going to be difficult, as days 4 and 5 are supposed to among the toughest, but luckily I have my husband doing this with me and an active challenge group to provide extra support!
