This recipe is so easy to pull off and a great way to cater to your whole family. I happen to have a few different palates in my crew, and love this kind of meal, as it can be easily customized to the tastes of everyone.
The adults will have it with chicken, one boy will have the cheese and beans, another boy will have chicken and rice, and the third will have it all, including lots of avocado!
This is also a fun meal to serve a crowd. Have everyone pull up a plate and help themselves, the more toppings the better.
- Organic black beans, rinsed and drained
- Shredded Mexican cheese
- Cooked brown rice
- Avocado Slices
- Rotisserie Chicken
- Cook rice according to package directions. I like the Trader Joe's 10 minute brown rice. It cooks up in a flash!
- Slice avocado
- Shred chicken
- Toast tortillas over stove
- Put additional ingredients in separate bowls. Feel free to add more toppings!
Tip: If you are trying to watch your carbohydrate intake, skip the tortillas and have a naked burrito. It's just as good!
