Today I want to celebrate the arrival of SPRING! It's been an up and down season here in the Northeast, but finally warmer temperatures feel like they are here to stay. This means the constant shivers and need to be clutching a warm beverage are subsiding. I've started to re-introduce one of my favorite clean breakfasts back into the rotation - the acai bowl.
Acai berries are a superfood commonly found in the Amazon (you've seen them there right?), and have MANY health benefits including heart health, energy boosting and antioxidant powers. Luckily, they are now accessible on these shores via Whole Foods or your local health food store. The powder is an amazing purple color, and to think it comes 100% from nature! This special ingredient takes my smoothie bowls from meh to awesome! Best news yet...my kids love them too, largely because of the fun color and they like to eat "smoothie soup".
Read on for a quick recipe so that you can integrate this healthy option into your summer routine!
Feel free to change my recipe - the portions still apply but you really can use whatever topping or fruit ingredients you'd like!
- 1 T acai powder
- 1/2 cups frozen mixed berries
- 1 banana, sliced
- 1/2 cup unsweetened almond milk (more if you want it a bit more liquid)
- Drizzle of pure honey
- 1 teaspoon peanut butter
- 2 T grape nuts
1. In a high powered blender, mix together the acai, berries, 1 banana, almond milk, agave nectar, and peanut butter until smooth and combined. It should be thick, like a smoothie. Pour into bowl
2. Layer with your preferred toppings. I used: grape nuts, blackberries, goji berries (another wonderful superfood), and also would recommend shaved unsweetened coconut flakes
